Yummy Barbecue Chicken Over Rice

1 pound of chicken breasts, boneless, skinless
2 tablespoon. vegetable oil
1 ½ cups barbecue sauce
1 cup water 11 – oz. whole kernel corn, drained
1 small green pepper, chopped
1 small red pepper, chopped
2 cups instant rice, uncooked


1. Slice Chicken breasts into strips or chunks.
2. Heat oil in a large skillet and brown chicken.
3. Stir in barbecue sauce, water, corn, and peppers.
4. Bring to boil.
5. Reduce heat.
6. Cover and simmer 5 minutes.
7. Remove from heat.
8. Add rice and cover. Let stand 5 minutes until rice is fluffy.
