Healthy Delicious Pancakes



1 cup oatmeal (not instant)
2 cups buttermilk
2 tablespoons sugar
1 teaspoon baking soda
¾ cup flour
2 eggs
Natural applesauce



  1. In a large bowl, soak the oatmeal in the buttermilk for about 15 minutes.
  2. Sift the sugar, soda and flour together and stir into the oat mixture.
  3. Beat in the eggs, mixing thoroughly, and let stand for 15 minutes.
  4. Heat the skillet over medium heat, and brush with oil.
  5. Using a ½ cup measure, pour out rounds and brown both sides.
  6. Butter the cakes as they are made and keep warm.
  7. Put applesauce between two pancakes and cut into wedges.
